This weekend I found myself scouring Pinterest (my food board here) for something to satisfy my urge to bake something fun. The fun recipe I settled on will come later this week (just a heads up- while this recipe is light, my "fun-later-in-the-week" one is not), but in my searching I ran across another that sounded too delicious and easy to pass up. These baked zucchini fries turned out even better than I expected. Justin and I both agree that we could trade a plate of these healthy alternatives for greasy fries any day.
